This is my go to meal for winter. It is one of those stick to your ribs, fills you up and you just feel good after eating.  Of course that may be the bacon talking.. but hey. It takes a bit of work to make, and it makes a giant batch of food .  Enough for many days of leftovers.   My mother’s homemade kluski.  It took me a while to get this down, to be able to re-create this.  She never measured anything for it so it was “you know by what it looks like and feels like”.   Hello…  I routinely would set off smoke alarms.

Anyway –

Into the good stuff.

  • 4 cups grated potatoes  (cheat here and use a food processor.   TRUST me.)
  • 1 tsp garlic powder
  • 1 tsp salt
  • 4 1/2 to 5 cups flour
What it should look like mixed.

Mix the above to make semi stiff dough.






After kneaded on floured board

Then knead on floured board. Set aside for now.





Drop by spoon fulls into boiling water.

Start a large pan of water to boil.  A large stock pan works well.

Once the water is boiling, drop dough by spoon fulls into the pan.  They don’t have to be even or perfect.   Cook this about 30 – 40 minutes or so stirring often.


  After adding bacon and grease, it starts to thicken into a gravy.

Toward the end of your dough cooking,  fry up 1 pound of diced bacon.   You want the bacon to be crispy.

Pour the bacon and all of the grease into the water with your dough.

Cook about another 5 minutes or so stirring often.  Your water will turn to a thick gravy consistency.
