Ingredients
- olive oil
- 1 (10 oz) can Pillsbury Pie Crust (refriged)
- 5 tblsp butter or margarine
- 1 lb boneless chicken breast cut into 1/2" pieces
- 1 medium sweet onion - chopped
- 3 tblsp hot pepper sauce ( or Franks hot sauce)
- 1 c diced tomatoes
- 4 oz (1c) shredded Monterey Jack cheese
Instructions
- Heat oven to 425 degrees.
- Coat cookie sheet with oil ( or use parchment paper )
- unroll dough. With sharp knife (or pizza cutter), cut into 4 rectangles. Place rectangles on oiled cookie sheet; pressing each to form a roughly 6x5 inch rectangle.
- Melt butter in large skillet over medium heat.
- Add chicken, onion and hot pepper sauce. Cook 4-6 minutes, stirring occasionally, until chicken is no longer pink.
- Remove from heat, stir in tomatoes. With a slotted spoon, spoon mix over dough.
- Sprinkle with Cheese.
- Bake 425 for 13-16 minutes or until crust is a deep golden brown.

So today I have neglected most everything important. I put in a few hours at work, did some cleaning – mopped my floors because .. mud season. Other than that – the day was dedicated to whatever the DH wanted. I took him out to dinner to his fav. restaurant.
