Buffalo Chicken Pizza

Ingredients

  • olive oil
  • 1 (10 oz) can Pillsbury Pie Crust (refriged)
  • 5 tblsp butter or margarine
  • 1 lb boneless chicken breast cut into 1/2" pieces
  • 1 medium sweet onion - chopped
  • 3 tblsp hot pepper sauce ( or Franks hot sauce)
  • 1 c diced tomatoes
  • 4 oz (1c) shredded Monterey Jack cheese

Instructions

  1. Heat oven to 425 degrees.
  2. Coat cookie sheet with oil ( or use parchment paper )
  3. unroll dough. With sharp knife (or pizza cutter), cut into 4 rectangles. Place rectangles on oiled cookie sheet; pressing each to form a roughly 6x5 inch rectangle.
  4. Melt butter in large skillet over medium heat.
  5. Add chicken, onion and hot pepper sauce. Cook 4-6 minutes, stirring occasionally, until chicken is no longer pink.
  6. Remove from heat, stir in tomatoes. With a slotted spoon, spoon mix over dough.
  7. Sprinkle with Cheese.
  8. Bake 425 for 13-16 minutes or until crust is a deep golden brown.

Shush I know I spelled Friday wrong.  It is on purpose.  It is an inside joke that makes me smile – so neener.  Anyway so its Food Friday!

I have been sidetracked today. It was guess who’s special day! Yep

So today I have neglected most everything important.  I put in a few hours at work, did some cleaning – mopped my floors because .. mud season.   Other than that – the day was dedicated to whatever the DH wanted.   I took  him out to dinner to his fav. restaurant.

So, onto Food Friday.
