Chicken with Shallots

  • 4 4-5 oz chicken breast halves - boneless and skinless
  • 1/4 tsp salt
  • 1/8 tsp garlic/pepper seasoning
  • 1 tbsp olive oil
  • 8 shallots - halved or quartered ( can use 1 large onion cut into thin wedges)
  • 1 1/4 c sliced yellow squash, zucchini or broccoli florets ( can be and or)
  • 1/4 c dry white whine ( optional)
  • 1/4 snipped fresh tarragon or parsley


  1. Sprinkle chicken with salt and pepper/garlic seasoning
  2. In a large skillet heat oil over medium-high heat
  3. Add chicken; reduce heat to medium and cook 2 minutes then turn chicken and add shallots to pan
  4. cook 8-10 min more until chicken done (stirring freq shallot)
  5. Transfer chicken and shallots to plate - cover and keep warm
  6. Add squash/zucchini/broccoli to pan
  7. Cook 3-5 min or until crisp tender
  8. Transfer to platter with chicken
  9. Sprinkle chicken and veggies with taragon
