Chicken with Shallots

Ingredients
- 4 4-5 oz chicken breast halves - boneless and skinless
- 1/4 tsp salt
- 1/8 tsp garlic/pepper seasoning
- 1 tbsp olive oil
- 8 shallots - halved or quartered ( can use 1 large onion cut into thin wedges)
- 1 1/4 c sliced yellow squash, zucchini or broccoli florets ( can be and or)
- 1/4 c dry white whine ( optional)
- 1/4 snipped fresh tarragon or parsley
Instructions
- Sprinkle chicken with salt and pepper/garlic seasoning
- In a large skillet heat oil over medium-high heat
- Add chicken; reduce heat to medium and cook 2 minutes then turn chicken and add shallots to pan
- cook 8-10 min more until chicken done (stirring freq shallot)
- Transfer chicken and shallots to plate - cover and keep warm
- Add squash/zucchini/broccoli to pan
- Cook 3-5 min or until crisp tender
- Transfer to platter with chicken
- Sprinkle chicken and veggies with taragon
