Chicken and Broccoli

So, in an effort to be more healthy and eventually move into the weight loss area of old age, I decided to modify my food intake. I am using the 21 day fix meal plans to transition into eating healthier foods. Tonight’s dinner was yum.

1.5 cups of chicken and broccoli = 1 green, 1 red, 1 tsp
Ingredients
- 1.5 lb chicken cut into bite size pieces
- 1/4 cup flour
- 2 Tbs olive oil
- 4-6 cups broccoli
- 12 oz mushrooms (I leave them out – I dislike them)
- From here down is for the sauce:
- 1 cup water
- 1/4 cup honey
- 1/4 cup soy sauce
- 1 tsp ginger powder
- 1 tsp garlic powder
Directions:
- Toss chicken pieces in flour to coat
- Heat oil and add chicken
- Mix sauce ingredients in a small bowl
- Once chicken is cooked through, add broccoli and sauce
- Cook for 5 more minutes or until broccoli is at desired tenderness
